Why: This wine has no added sulphur, acid or sugar. It is light and smoky with hints of red fruits, and will pair perfectly with dishes from MORSELS’ diverse sharing menu, such as Rendang Beef Tartare and Cursed Kühlbarra Barramundi.

Why: This Cantonese restaurant serves everyone’s favourite classics. Think suckling pig, roasted duck and lots of seafood. This peppery, award-winning Shiraz is powerful enough to match these bold flavours.

3. New Ubin Seafood Restaurant (CHIJMES)

Why: New Ubin Seafood serves fresh seafood many ways: from steamed clams to black pepper crab. Sauvignon Blanc will complement the saltiness of the food, while bringing out the fruits in the wine.
4. Bedrock Bar and Grill

Why: Bedrock does big steaks over wood-fire grills. This Shiraz’s high tannins will stand up next to a peppery steak or juicy rib-eye. Plus, it is heavy enough to take on a strong sauce.
5. Wah Lok Restaurant

Why: One of my personal favorites is Cantonese cuisine. Who doesn’t like dim sum right? I would bring an aromatic white wine to match up with all those beautiful but delicate flavours. Aromatic enough to counter all the different flavours in the dishes, but not too expressed so it won’t overpower the dishes.
6. Gattopardo Ristorante Di Mare

Why: Classic French bistro! Some would argue French food requires French wine. The wine is ripe, which will pair so beautifully with the creamy cheese and the sweeter duck meat.

Why: Traditional Italian food done the right way. The grape, Barbera, is not only smooth but also has low tannins, great acidity and lots of fruits, making it a very drinkable wine. Simply delicious.
